Banana Caramel Sundae

It’s no secret that I’ve been going bananas for bananas lately! Every weekend I restock myself with a fresh couple of bunches! I love when people come over and see the mountain of bananas and wonder what the heck we do with them. Well guys, the possibilities are endless!!!!

First of all, this is very important, we do not eat them until they look like cheetahs. The spots are a sign of simple sugars that are easy to digest in comparison to hard to digest starch that makes you constipated. It’s always like Christmas morning here, I run down the stairs in hopes that my bananas are ready to go. The waiting game is always the hardest. Once it has become spotty I put them in the fridge and they are usually good to go for another 2-3 days.

Now whatever I don’t get to, I peel and freeze. I use frozen bananas for smoothies AND nice scream/nana cream/naners cream! It’s heavenly, healthy, cheap and delicious!!!!!

Today I made some delicious caramel sauce to go with it! Angelina and I devoured it and has kept us full for a good part of our day!

Wait till you see the ingredients, it’ll blow your mind!!!

And this recipe couldn’t come at a better time since it’s finally starting to warm up!

Banana Caramel Sundae

Ice Cream
4-5 Frozen bananas (that’s it)

Caramel
15 Pitted dates (I used Parnoosh but if your using Medjool 8 will do)
1 tsp Vanilla extract
A pinch of Celtic salt
Water (according to texture desired)

In a food processor mix all caramel ingredients and continue to add water until you reach desired texture.

In a high speed blender (I used a Vitamix) blend bananas until smooth.

Layer nice cream and caramel, top with some toasted coconut and fresh fruit!!! Enjoy!!!!

Homemade Vanilla Almond Granola

Happy Saturday!!!!

First of all thank you to all the people that have sent messages on how inspired they are from the last couple of posts. Even if I can make a difference in one persons life, I’m on cloud 9. So can you imagine how I feel right now?!?

I love getting Facebook, Instagram and blog messages with questions and comments. I really try my best to get back to you within 24 hours, especially when it comes to these new recipes. I know how excited I was to try them and I don’t want to keep your body waiting for this healthy delicious goodness!

This recipe is one of the first things I tried making and it’s been a hit in my house since. It’s perfect for breakfast, a sweet snack or a crunchy snack! Eat it in your Acai Bowl, make a yogurt parfait, chia pudding or just with milk. I promise you, you will love it! And be prepared for your house to smell MAGICAL! Drool will start falling out of your mouth as you stare through the oven window just waiting for it to finish! Don’t say I didn’t warn you!

Granola Recipe

Ingredients
– 3 cups rolled oats
– 1 tsp cinnamon
– 1/2 tsp Celtic sea salt
– 1 cup shredded unsweetened coconut
– 1 cup almonds
– 3/4 cup pure maple syrup
– 1/4 cup melted coconut oil
– 2 tsp pure vanilla extract

Mix together and spread over baking sheet. Bake at 325 for 35 mins, stirring at 20 mins. Remove and let chill.

I’ve got the GOOD VIBRATIONS

Hi Friends!

I am so happy to say that I am staying on track of my back to ship shop shape mission. Truthfully I haven’t weighed myself recently, but I feel great! I’m just leaning towards my goals, leaning leaning leaning.

Actually before I even get to the health part, I owe all the Moms who responded to my plea for help with Angelina’s night time crying a super major huge enormous thank you! I tried all your suggestions, mixed and matched a few and I think i’m finally on the right track. The key I was missing was routine. Yup, that simple ROUTINE. I feel like I should’ve known that… But I totally didn’t. Apparently when we put our babies on schedule, we are able to predict and read them a lot more clearly. I can sometimes even beat her to it now! Night time routine we are (for the most part) on track now, the day time is hit or miss. But i’m getting there! So to all the ladies that responded THANK YOU THANK YOU THANK YOU!

And I’ve ordered the teething necklace thanks to your recommendations! A lot of you said the same thing in regards to being unsure if thats what did the trick, but I figured I have nothing to lose. I’ll let you know how that goes!

On to eating! We just renewed our Costco membership and I had a field day! I was so happy when I got home that I took a picture with my groceries. Does that make me sound like a crazy person? It just looked so pretty and colorful! Firstly I’m a sucker for organic fruits and vegetables, I definitely can taste the difference in the food but I can also see the number its doing to my wallet… Something had to give. So I have now decided that until the local farmers markets are back in action in my area, i’ve chosen to do a bulk of my shopping at Costco. Since I hadn’t been there in awhile, I can say I was pleasantly surprised by there beautiful fruits and veggies. Quality, check! Quantity, check! Still have money, check!

Now, I have to be honest… Some food I just couldn’t replace, i’m leaning remember?!?! Like have a looksy at the delicious Cosmic Salad with edible flower petals. Like gezuz murphy, its gorgeous! Flower petals?!?! Hi i’m Gods gift and I eat beautiful colorful flowers, just because… Just saying. But since i’m just leaning away… I don’t go too crazy anymore. But heres a fun fact for you, did you know that you can tell if something really truly is organic by looking at it. Dr. Oz taught me this and I had to share. If you look at the sticker son the fruit or veggie, if it starts with a 9, thats an organic sexy beast! So make sure you look for 9’s before you hit the cash register!

So yes i’m still smoothing and juicing every day without fail. I am getting an enormous amount of fruits and vegetables in. I’m also loading up on superfoods like mulberries, wheatgrass, flax seeds and hemp hearts daily without fail. And i can honestly say that I feel ravishing! (I think thats the first time i’ve ever used that word, but it really works here) I feel happy and vibalicious. Heres one of my many new fun fav recipes inspired by @blkwhiteblog on Instagram for you to try! I changed it up a bit, but loved her idea. Give your body some love, give it some happy energy, vibe baby vibe!!!

Coco Acai Berry Berries Smoothie

Ingredients:
I cup of steeped Acai Berry tea (decaf), cooled to room temperature
2 Bananas
1 cup of berries
Coconut Water (as much as you like, depending on how thick you prefer it)
4 ice cubes

** Blend away**

Badabing Badaboom your done!

Rockin’ OHH HAYYY Confidently! The time has come!

Tis the season to shop till you drop!  Hubba Bubba and I are all about the last minute shopping but boy oh boy it was not as easy as it usually is.  We took a lot of pit stops through out our adventure, thank God! With a hit of some yummy Icee and a pretzel or two… I was like an energizer bunny ready to go again.  Yes the pretzels aren’t the healthiest food in the world, but the dipping in butter with the sea salt ummm ummm yummy in my tummy.  I was doing it for Bam Bam, I swear!

So despite my slip up today, I have recently learnt that preggo women gain a lot of their weight in the last couple of weeks.  I was never told this vital information, I thought I was rockin’ a pretty good pregnancy weight wise.  Even though I have gained a heck of a lot, I would like to think I was holding it pretty well.  Come last week and this week, its kinda sorta changed.  It’s filling in, filling in quick!

Prior to getting pregnant I was living a pretty healthy lifestyles.  I was overly addicted to fruits and vegetables. Even leaning towards a raw diet. I craved fruits, vegetables and nuts! Well that’s kind of gone done the pooper, but every reflection I’ve been catching of myself is pushing me back to my old ways.  It’s pretty safe to say I have had my cake and ate it too and Ferreros and Revellos and… well I could keep going but you get my point.

On my off time, I use to love going through YouTube videos to see what fun concoctions people would come up with.  I have shared some of my favourites below.  Here’s a warning though, this type of eating (“healthy eating”) begins to get addictive.  Especially when you realize how many delicious foods you can make that are HEALTHY! Sometimes it honestly tastes like your cheating, BUT YOUR NOT! YOWSERS!

Raw fettuccine alfredo? Ice cream? Butter? Come on!!! Feel free to jump on the healthy band wagon at any point guys.  After the holidays are done, we all know we’re going to need this.

P.S The Mean Green Juice is hubbalicious and my favourite.  It is yummy, energizing and has become a necessity in our life.  Give it a trysys!

Glow Baby Glow!

Well well well, looks like little Miss Monday is back again.

Surprisingly I’m not despising today as much as I usually do.  I’m okay, I’m doing good, I may even dare to say I’m happy.  Crazy right?!?!

I know, I know we have all heard about the craze of Wheatgrass for the last couple of years.  Now when I use to go on my health freak attacks, I would find myself driving to Booster Juice to get my Wheatgrass fix.  I still remember the first time I tried it, I thought that it kind of tastes like the smell of freshly cut grass.  If that makes sense?  You know the taste of a smell…  It does.

It really is a quick, WHABAAM! In and out in two seconds!  And honestly, I swear I felt a burst of lasting energy.  It’s kind of like gulping down a massive Gatorade or Powerade.  Yehhhawww!!!!  I’m feelin’ good!

Now we all are about convenience, I was introduced to the magical Dynamic Greens site a couple of months ago.  Yes I read the information online, yes I saw the pictures and yes I saw the YouTube video but for me to be sold on anything I had to see it with my own eyes.  What did I do?  Drove to the farm.  Let me tell you, first of all we got a complete tour of how the process works from the seeds, to growing the wheatgrass, flash freezing and packaging to distribution. We literally picked the wheatgrass off the farm and ate it straight from Mother Nature herself.  It was a pretty unreal experience.  And can I tell you, it was delicious.  You can actually taste the freshness in there.  Naturally I had to grill them with questions while we were there (FYI this is not a big production, family owned business – the gentleman we sat down with actually began growing this for his wife when she was diagnosed with Cancer).  We were invited into their home, sat at the table and sipped Wheatgrass out of wine glasses.  It was fancy shmancy!  I was educated to the tee, I learnt so much more additional information about Wheatgrass it was insane. Did you know (information taken straight from the site):

  • 1 fl. oz. of wheatgrass      juice is equivalent to 2½ pounds of the choicest vegetables (COME ON!)
  • wheatgrass is mineral rich and contains 92 minerals needed by the body
  • it is a complete protein containing 20+ amino acids and has higher protein densities than any other food source
  • the magic is in the enzymes with more than 30 found in the juice
  • the juice is 70% chlorophyll and since the chlorophyll molecule is virtually identical to hemoglobin (red blood cells that carry oxygen), wheatgrass juice will oxygenate your body

Best part, it’s cheaper ($1.25/ounce) than the other places (because you are buying in bulk) and convenience galore.  And they ship to anywhere in Canada or the United States and it is guaranteed to come frozen.  We always have an ample supply in our freezer!

The morale of the story, be kind to your body.  So if you can start your day with a quick shot of green healthiness that is equivalent to 2.5 pounds of veggies… WHY NOT? Where ever you get it from!

P.S Did I mention, I was originally introduced to wheatgrass from Dynamic Greens by people who had cured themselves of Cancer by drinking this little number and declining radiation and chemotherapy treatments?  Obviously they drank a substantial amount more during their healing period, but it worked.  But you don’t have to take my word for it!  (Reading Rainbow quote again!)

Get Your Cookie on! Vanilla and Almond Choc-Chip Cookies! Yummmyyyy

Good ol’ Monday is back again friends.

Monday is usually the day where we feel guilty for all the not so good choices we make on the weekends, the day the gym is packed and the day we all decide this is the week of change.  Lol, sound familiar?  Story of my life all day, every day!

So I’m an instragram creeper, I can totally admit it.  My fav hashtag seach to do is food, well raw food or vegan recipes.  It just amazes me how delicious some foods can be, still be healthy, pretty and colorful! In my search I came across some delicious Vanilla and Almond Choc-Chip Cookies. OH NELLY! I have made at least 6 batches of this recipe since I found it and I usually devour it within 1-2 days.  Best part, once you read the ingredients in the recipe you will realize it’s okay to eat that many cookies because THEY ARE GOOD FOR YOU! SAYYYYYYYY WHATTTTTTTT!  And I swear I hear time and time again that almonds make you smarter. Soooo basically the more cookies you eat, the smarter you get!  Yes yes yes! Can you tell how excited these cookies make me, lol?

Now the app that has this award winning recipe is called Whole Pantry.  The pictures throughout the entire app are beautiful.  Each picture makes the recipe look like a piece of art work.  I have attached some pictures so you can take a gander.  Some are raw recipes, some include very minimal cooking but all are healthy ma-nealthy.

Check this bad boy out:

Ingredients:

  • 130 grams of almond meal (aka grounded almonds)
  • 2 ½ tbsp. of melted coconut oil
  • 30 grams cacao nibs (healthy chocolate chips, google it!)
  • 2 tbsp maple syrup (I use Agave Nectar)
  • 1 tsp vanilla extract
  • ¼ tsp sea salt
  • ¼ tsp baking soda

Directions:

  1. Preheat oven to 340 F.
  2. If making your own meal, add 1 heaped cup of almonds to a processor and process on high until crumbly texture.  This yields 1 ½ cups.
  3. Combine all ingredients in a bowl.
  4. On a lined baking tray, measure and roll 1 tbsp of batter and press lightly in center.
  5. Bake for 13-15 minutes until golden.  They will be soft when removed from oven but will firm up as they cool.  Centers will stay soft and fudgey when cool, if preferred crunchy, place back in oven for an additional 3-5 minutes.
  6. Store in sealed container for up to 5 days, but we all know that is NOT HAPPENING. I give it 2 days maximum.

Once you’ve tried this recipe, I’m guaranteed you will be sold on this app.  Download it! Just saying!  I have had three for breakfast today and wish I brought more… so yummy in my tummy.

Glorious Green Goodness

As mentioned on Instagram (username: paritaTIME) a couple days ago, I have found a delicious bright green shake that just makes you want to do the shimmy shake!

Now we all know my Iron levels are not up to par, so I’m always trying to look for alternatives to add extra iron to my diet.  So obviously Kale and Spinach are great go to’s for me.  And boy oh boy have I found a way to incorporate them together in a yummy and delicious way!  This isn’t new, apparently everyone is doing it when you search on YouTube but it is fab, so it makes sense.  I watched vmorales1984 (on YouTube) put here concoction together and she made it look so easy.  I’ve attached the link below for your viewing pleasure.  Now the last couple times I’ve made it, I’ve substituted apple juice, cranberry juice, pomegranate juice instead of the orange juice. But honestly anything goes.  I always add a tad bit of yogurt just for funzys!  And I prefer the dark, bruised up bananas cause they are sooo much sweeter, in my opinion.  Now look at all the health benefits that come out of this below and that’s not even all of them!!!! OHHH nelly, everything has been smooth operations since I’ve been hooked to this.  I have more energy, I feel great, my body feels light as a feather, regular is my middle name and ya’ll need to try this game.
