Raw Chocolate Chip Cookie Dough – Dangerous Recipe!

If you are anything like me, I am a snack person. I always need to be munching on something. Let’s be honest, sometimes water just doesn’t do the trick!

I have tried my very best to eliminate all the bad food from our fridge and pantry. My husband on the other hand still likes a couple of snacks that he ain’t willing to give up. Example: sour sugared candies and rippled chips are his weakness. So in order to have those in my house without scarfing them down, I need to have other things ready to go when hunger strikes.

I have been experimenting with raw chocolate chip cookie dough for a couple weeks now. The first batch I made, my husband claimed he did not like the texture, I on the other hand liked it. It grew on me. It did taste a little different and the texture did take some getting use to but I actually liked it. I’m still contemplating sharing that recipe, but I’ll try it again with a couple of changes first.

This time I thought I would try a whole new recipe to see if I could toddle his fancy. LET ME TELL YOU, this is the real deal! It is ridiculously delicious and tastes exactly like chocolate chip cookie dough but it is vegan and gluten free! Hello!!!!!!!!

I found this recipe on www.averiecooks.com and once I read everyone’s reviews, I knew I had to try it ASAP! Now the only thing I want to stress is the importance of buying quality products. In this case the agave nectar, the real maple syrup and vanilla extract are key! Trust me it’s worth the investment to get good quality ingredients. Your body will thank you!

Last thing, I have to say that I didn’t have raw cashews at home so I substituted roasted unsalted cashews instead! It still turned out DELICIOUS! My mouth is watering as I write this!

Raw Chocolate Chip Cookie Dough

Ingredients:

2/3 cup raw cashews
1/3 cups oats
2 tbsp agave nectar
1 tbsp maple syrup
1 tsp vanilla extract
1/4 cup mini chocolate chips

Directions:
In a food processor or Vitamix blend both the cashews and oats to a fine powder. Be sure not to over blend!

Add in the agave nectar, maple syrup and the vanilla extract. Do a quick blend. Then add the chocolate chips and mix by hand.

Roll into balls and place in an airtight container in the fridge.

WARNING: these are highly addictive, you won’t be able to stop at one!

Raw Rainbow Pad Thai

I’m happy to say that I’m still going strong on my health kick. I’ve had a cheat day here and there, which is usually what really screws me over because thats when I decided to throw in the towel but this time I actually feel guilty when I cheat. Or if I do cheat, I follow it up with at least 2-3 glasses of herbal decaf tea. In my head, that evens it out… Don’t ask!

I have lately been using myself as a guinea pig and testing out a lot of new recipes, superfood powders, homemade body scrubs, homemade face scrubs that I can hopefully share with you soon. Right now I’m testing the powders, face and body scrubs to see if it actually works before sharing it. (Spoiler alert! The body scrub I’m using right now apparently helps reduce the look of stretch marks and cellulite… Cross your fingers!!!) Same goes with the recipes, I like to try them a couple of times to make sure I got it down before sharing it.

This recipe I have eaten many many times! In the last week alone I’ve ate this Raw Rainbow Pad Thai dish at least 5 times. It is so yummy, tasty, crunchy and spicy! What else do you need in life, really?!?!

Now if you don’t have a spiralizer yet, you need to get it! It will change your eating experience. You will be introduced to a whole new world of zoodles (zuchinni noodles), sweet potato curly fries (recipe coming soon, still tweaking a bit), perfectly spiralled crunchy carrots, honestly the list is endless. It takes your salads and your presentation to a whole new level. Where do you get this life changing zoodle maker from you ask? I got mine from Amazon for $29.99 and it was delivered to my door in 2 days! For anyone who has a Kitchen Stuff Plus near by they carry it there as well!

What I like to do is prep myself a head of time. This way in case I’m about to cheat… When I look in the fridge and see everything ready to go and have no excuses. I do enough veggies for 2-3 days.

Another easy time saving trick, if you have a food processor with the extra attachment for grating and shredding USE IT. You will be done in minutes! I use my food processor to grate my carrots and shred my cabbage. Literally two minutes and WHAMO BAMO its done!

Without further ado, here’s the recipe for the magical Raw Rainbow Pad Thai.

Ingredients: 1 serving
– I cup zoodles (spiralized zuchinni noodles)
– 1/2 cup grated carrots
– 1/2 cup shredded red cabbage
– 1/3 cup edamame (I use frozen deshelled edamame, that I defrost in a bowl of water)
– 1 tsp sesame seeds
– cilantro to garnish

Sauce: 5-6 servings
– 1/2 cup of peanut butter
– juice of two limes
– 2 tbsp of tamari or soya sauce
– 2 tbsp of agave nectar or honey
– 2 tsp of grated fresh ginger
– 1 tsp Siracha sauce (add according to spice preference)
– 2-3 tbsp of water to reach desired texture.

To make the sauce simply throw everything into a bowl and mix away!

In a large salad bowl mix together the zoodles, carrots and red cabbage. Add a tbsp at a time of your sauce to coat your veggies. I find that 1.5-2 tbsp does the trick for me. Top with cilantro, edamame and sprinkle on your sesame seeds.

For all the non vegetarians out there looking for some additional protein, you can add a fried egg with an ooey gooey yolk!

Be the Type of Person You Follow on Instagram

Be the type of person you want to meet – said someone really smart, who knew what they were talking about and felt it deep within their soul.

The other day Hubba Bubba and I took our princess to the mall. We thought it would be nice to go for a stroll and maybe do some wardrobe updating for me while we were at it. To our surprise, we walked into a treat… It was basically a mini hands on zoo. They had massive turtles, alligators, anacondas, house hippos, OH NELLY I could go on. The best about this is you were able to hold them. Right away hubbalicious jumped on holding the alligator, even with his mouth closed shut I was trembling at the thought. The house hippo was easy breezy to hold, it was basically like a slimy puppy, then from the corner of my eye I saw this massive snake… With my stroller I RAN, incase she lost control and came my way. Then I found myself staring, no matter what corner I was in for some reason I was drawn to this beautiful animal. Now if you know me, a snake is something that would scare the living day lights out of me, but for some odd reason she wasn’t doing that. Then something in my head told me, if everyone else can do it, why can’t I? I had this quick brief moment when I started thinking, the older I’m getting the less gutsier I am. I used to love challenging myself and doing things people would never expect me to do, what happened? At that moment I chose to flick a switch, NO MORE. I looked at Hubba and said “I want to hold the snake'” he looked shocked, THAT LOOK! That’s what I was looking for, WOOHOO so easily!

That moment is when I realized how easy it is to change my mind set and how people view me. HECK I held a snake… A big one, even as it took its tail and started wrapping its way around my leg, I was calm. She was beautiful, that’s all I saw.

When did I stop challenging myself? If you remember from my last blog, I mentioned that I am a raw/vegan wannabe. I follow people living this lifestyle on a daily basis on Instagram and on different blogs, I’m obsessed… I can see myself being like that. I want to be like that. But whats stopping me from giving it a chance? I have absolutely no clue, that’s sad. Challenge accepted!!! That night as I was lying in bed, I decided its time. I made myself an achievable goal, but still a hard one. Eat as many fruits and vegetables for one whole week straight, no meat, no cheating, no processed food, no sugar, no nothing bad for me that doesn’t serve my body it’s highest good. Paired with at least 2L of water. The goal is not to loose weight (hey if I do, BONUS) but to start feeling amazing and do something i’ve been wanting to try forever. No more limitations. Day 1 complete, on to Day 2!

Goal: I want to be the type of person I want to meet, or in this day and age, be the type of person you follow on Instagram.

Happiness Drug = Sweets Sweetie Pie

Hello Friends!!!

Well well well… You will not believe what I’ve been up to. Ohhhh i’ve just been making delicious chocolate coconut macroons-ish AKA cacao coconut raw vegan bundles of joy! First of all its made of nothing but delicious healthy goodness, which makes it a scrumptious guilt free treat!

I know for me, whenever i’m done my meals i’m craving a sweet little something something to refresh myself. I noticed that I was usually going for the not so healthy options. Well ladies and gentlemen I found a quick, easy, yummy in your tummy recipe that will keep you satisfied. Ohhh baby!!!

Ingredients:
– 3 tablespoons of cacao powder NOT cocoa powder (it is not the same thing!)
– 1/2 teaspoon of agave nectar
– 3/4 cups of unsweetened shredded coconut
– 1/2 cup on organic coconut oil

Directions:
– Mix in a bowl.
– Dish onto a pan thats lined with parchment paper.
– Place in the fridge for 15-20 minutes.

BADABING BADABOOM your done!

Coconuts and coconut oil consumption reep so many benefits! Like regulating blood sugar, raising metabolic rates, contributing to weight loss, acts as an anti-inflammatory in the digestive tract, gives you a boost of energy and thats just to name a few!

And the cacao powder, ohh my goodness gracious! It is loaded with antioxidants flavonoids that promote cardiovascular health and protect us against toxins, its also a high source of magnesium, iron and vitamin C! And heres my favorite, cacao raises levels of serotonin in your body. That blissful feeling that acts like a happiness drug! COME ON!!!
