Banana Caramel Sundae

It’s no secret that I’ve been going bananas for bananas lately! Every weekend I restock myself with a fresh couple of bunches! I love when people come over and see the mountain of bananas and wonder what the heck we do with them. Well guys, the possibilities are endless!!!!

First of all, this is very important, we do not eat them until they look like cheetahs. The spots are a sign of simple sugars that are easy to digest in comparison to hard to digest starch that makes you constipated. It’s always like Christmas morning here, I run down the stairs in hopes that my bananas are ready to go. The waiting game is always the hardest. Once it has become spotty I put them in the fridge and they are usually good to go for another 2-3 days.

Now whatever I don’t get to, I peel and freeze. I use frozen bananas for smoothies AND nice scream/nana cream/naners cream! It’s heavenly, healthy, cheap and delicious!!!!!

Today I made some delicious caramel sauce to go with it! Angelina and I devoured it and has kept us full for a good part of our day!

Wait till you see the ingredients, it’ll blow your mind!!!

And this recipe couldn’t come at a better time since it’s finally starting to warm up!

Banana Caramel Sundae

Ice Cream
4-5 Frozen bananas (that’s it)

Caramel
15 Pitted dates (I used Parnoosh but if your using Medjool 8 will do)
1 tsp Vanilla extract
A pinch of Celtic salt
Water (according to texture desired)

In a food processor mix all caramel ingredients and continue to add water until you reach desired texture.

In a high speed blender (I used a Vitamix) blend bananas until smooth.

Layer nice cream and caramel, top with some toasted coconut and fresh fruit!!! Enjoy!!!!

My Not so Epic Fail!

Two words EPIC FAIL! Okay okay I’m being a little hard on my self but I think this opened my eyes on how I may need to be a tad bit realistic. One thing that I didn’t take into consideration is the time factor… Well actually the lack of time factor. I forgot one key fact, I don’t make my schedule, a little small person does.

First the highs, I’ve started my wheatgrass again faithfully. That’s a good start. Every morning I have been making a delicious fruit smoothie. Thank God for the Vitamix. It is so quick and easy to use and clean. I am drinking at least 2L of water a day. And once in awhile I am making my uber favourite Mean Green Juice in the juicer.

Now the lows, I told myself one week no meat. I ate it 3 times. And I indulged in food cooked in fatty fatty fat fat oil once. I cheated on myself. I realized will power is definitely not my best friend. Something I need to work on.

Wait let me go do the dreaded scale check…

Not bad, not bad. Since the first time I shared my numbers I have lost and kept off 6lbs. (Why I say kept off is because I’ve been the same for a couple of days… And my oily meal day was two days ago.) So I guess I didn’t do too bad. I’m sure a lot of it can be due to breast feeding, but heck I’ll take it at this point. But again I wasn’t trying to change my habits to lose weight, although any shedding would be great… It was more for a mind and body stimulation boost! To give my body that natural high, that spring in my step, the woohoo I love veggies feeling. Honestly, I am not there yet. And I know it exists because I’ve been there before. I just have to somehow keep reminding myself how much I loved it, because I know when I get there it will be easy sailing… But getting there is the issue. Go on body GPS, find the easiest and quickest route. Help a sister out!

So after writing this, it’s not really an epic fail after all, it was more of a gradual shift in the right direction. I just changed this blogs title from “Sorry Body I Failed You” to “My Not so Epic Fail.” I have been so dramatic lately. It’s kinda funny.

Now that I’m back on the positivity wagon, I think I will make myself a seriously delicious salad with tempeh – yup I saw it on Instagram. Chime in Ding Ding – be who you follow on Instagram! I ate it earlier this week and it was actually yummy, not fake yummy where I just say that because it’s good for you so I’ll pretend its good, but actually good.

Off to cut vegetables I go, I’m just shifting away.

Rockin’ OHH HAYYY Confidently! The time has come!

Tis the season to shop till you drop!  Hubba Bubba and I are all about the last minute shopping but boy oh boy it was not as easy as it usually is.  We took a lot of pit stops through out our adventure, thank God! With a hit of some yummy Icee and a pretzel or two… I was like an energizer bunny ready to go again.  Yes the pretzels aren’t the healthiest food in the world, but the dipping in butter with the sea salt ummm ummm yummy in my tummy.  I was doing it for Bam Bam, I swear!

So despite my slip up today, I have recently learnt that preggo women gain a lot of their weight in the last couple of weeks.  I was never told this vital information, I thought I was rockin’ a pretty good pregnancy weight wise.  Even though I have gained a heck of a lot, I would like to think I was holding it pretty well.  Come last week and this week, its kinda sorta changed.  It’s filling in, filling in quick!

Prior to getting pregnant I was living a pretty healthy lifestyles.  I was overly addicted to fruits and vegetables. Even leaning towards a raw diet. I craved fruits, vegetables and nuts! Well that’s kind of gone done the pooper, but every reflection I’ve been catching of myself is pushing me back to my old ways.  It’s pretty safe to say I have had my cake and ate it too and Ferreros and Revellos and… well I could keep going but you get my point.

On my off time, I use to love going through YouTube videos to see what fun concoctions people would come up with.  I have shared some of my favourites below.  Here’s a warning though, this type of eating (“healthy eating”) begins to get addictive.  Especially when you realize how many delicious foods you can make that are HEALTHY! Sometimes it honestly tastes like your cheating, BUT YOUR NOT! YOWSERS!

Raw fettuccine alfredo? Ice cream? Butter? Come on!!! Feel free to jump on the healthy band wagon at any point guys.  After the holidays are done, we all know we’re going to need this.

P.S The Mean Green Juice is hubbalicious and my favourite.  It is yummy, energizing and has become a necessity in our life.  Give it a trysys!

37 Weeks

Well well well hello there friends.

We are now at 37 weeks, basically Bam Bam can come at any moment now. For all we know I could be having contractions as you are reading this.  I am apparently considered to of carried full term and all of Bam Bam’s organs have fully developed.  Oh and before I forget to mention, I am officially on Maternity leave.  HOORAY!  Great timing because this week is kind of a hard one, I am pooped! For some reason I wake up early every day.  Now when I say early, we’re talking between 5:00am and 7:00am automatically.  No alarm… I guess my body is getting ready for waking up at all hours of the night.  My body is preparing me for motherhood… I guess?

My mind is officially running a 100 miles an hour.  I’m trying not to worry or stress about anything, but I think its second nature when you are this close.  For the most part, it has been an amazing experience for me.  I haven’t let anyone’s horrible birthing stories get to me and I have kept pretty positive.  Don’t get me wrong, there are times where Daddy-to-be has had to chime in and give me a WOOSAHH moment to get me centered again.  But its all gravy and daisy’s.  While I am on the subject, to all moms out there, I don’t know if you remember being at this stage in your pregnancy, but if you don’t have a beautiful birthing story or an encouraging birthing story please don’t bother sharing it.  How in any way do you think that it is helpful to the preggo momma staring straight at you? If you don’t have anything nice to say, don’t say it at all.  Do you think that’s where that saying originated from? Geez Louise!

With all that being said, this week has been a somewhat relaxing one, I had full intentions of cleaning the house, getting things ready… but its been more making healthyness and sleeping.  For our Anniversary, hubbalicious got me a Vitamix, so I have been using that for everything! If you haven’t watched the demo for it at Costco or on the shopping network, let me tell you… you are missing out! Honestly, it is magical!  It can be used to make ice cream or something completely opposite like soup.  To the point where there is steam coming out of the blender when it is complete! Come on!! It has been my saving grace, and with it being easy breezy to clean, it has given me plenty of time to sleep.  Any time during the day I see a shut eye opportunity, I am knocked out.

So stay tuned ladies and gentleman… I am due the first week of January but the belly is beginning to drop.  Don’t know if it will be a 2013 or 2014 baby! Or Bam Bam very well could be the first baby born of the year or a Christmas Miracle.  I’ll keep you updated!!!

Now i’m off to my Midwife appointment! TATA!
